"Pasta"  and Italian Sausage Skillet Meal
I love pasta with a creamy sauce! Throw in a really good Italian sausage and you have me hook, line, and sinker.  This dish was favorite before I made the lifestyle change to keto and with a quick pasta change it still is. 

I use ThinslimFoods.com pasta.  It's been a great substitution for me when I need something a little more substantial than miracle noodles. 

Remember when the ingredients are few make sure they are good quality.  This is such a quick meal and it cooks in one pot so go for the good sausage and the good roasted red peppers.  I know you will enjoy this one.

1 1/2 pounds  Italian Sausage 
16 oz Pasta of your choice
2 T olive oil
1/2 cup onion, diced
1/2 cup roasted red bell pepper, chopped
3 cups chicken stock
1/2 cup heavy cream or 1/2 and 1/2
1/2 cup mozzarella cheese, shredded
1 tsp Italian seasonings


In large non-stick skillet with lid heat olive oil over medium heat. Add Italian Sausage break apart with wooden spoon. Break into small pieces as you are cooking.

After sausage is thoroughly cooked, add into pan: pasta of your choice, diced onion, roasted bell pepper, and chicken stock.

Place lid on pan and bring to a boil. Reduce heat to a medium-low simmer, cook for approximately 12-14 minutes until pasta is tender.

Add heavy cream to pan and simmer an additional 3-5 minutes, sauce will be slightly thickened.

Turn heat off. Sprinkle shredded mozzarella cheese and Italian seasoning on top. 

Place lid back on for 2-3 minutes or until cheese has melted.
