Cucumber Dill Rotisserie Chicken Salad

This is NOT your mama’s chicken salad! This is not “comfort food” chicken salad either. This is something all together different. It’s cool. It’s refreshing. It’s perfect for a hot summer day. Or when you are hosting an luncheon or need to “bring a dish”.

I think what makes it so different is the use of Yogurt and lemon juice instead of the typical mayo. Adding the bright fresh parsley along with cucumber just turned it into something a little fancier. Personally, the fresh parsley was one of the main ingredients and can’t be substituted. It did seem to over take the dill flavor slightly so I bumped it up a notch with a drop of dill vitality oil.

I had this on crisp romaine lettuce leaves. It just added to the “healthy” of the whole meal. LOL This is a perfect Keto lunch for me. Low carb and Low calorie. Can’t go wrong with that combination. Enjoy!

Cucumber Dill Rotisserie Chicken Salad 

INGREDIENTS

3 cups rotisserie chicken, chopped and chilled
2/3 cup full-fat Greek yogurt
1 tablespoon dijon mustard
Juice of 1/2 lemon
1/3 cup green onion, chopped
3/4 cup seedless cucumber, peeled and chopped
1/2 cup celery, chopped
1/4 cup fresh parsley, chopped
1 teaspoon (dried) dill
1 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

Mix all ingredients together in a large bowl and stir until completely combined.
Store any leftovers in an airtight container in the refrigerator.
