Basil Pesto Chicken Salad
As we navigate this new normal I have been pulling up some old stand by recipes.  I need things that I can make ahead and keep handy in the fridge.  This one is quick to make and easy to double or triple or whatever you need.  
Basil Pesto Chicken Salad 
2 cups cooked chicken - I used one whole rotisserie chicken
1/2 cup or more as desired of Basil Pesto
1/2 cup or more as desired of Parmesan cheese
2 TBSP pine nuts
1 cup grape tomatoes, halved
Mix all together and let marry together in the fridge for an hour or so before serving.  You can serve on rolls, lettuce leaves, or a spoon .  LOL
