Peanut Butter Granola

Unfortunately most store bought granola has a lot of sugar in the recipe. No matter how organic, non gmo, and "healthy" it is the sugar is just a no go for me. So I've been exploring different recipes and making my own.

ahhhh I love being in control. LOL

½ cup of almonds
½ cup of sunflower seeds
¼ cup hemp seeds
½ cup pumpkin seeds
1/4 cup cashews
1 cup of grated coconut
6 tbsp. of erythritol
2 egg whites
1/2 cup of peanut butter
1 tsp. vanilla extract

Preheat oven to 325 degrees F. Garnish baking sheet with parchment paper.

In a large bowl mix everything except the eggs white, the peanut butter and vanilla

Whisk together egg white, peanut butter and vanilla extract.

Pour evenly over the granola

Mix by hand until everything is evenly coated.

Transfer the mixture to the prepared baking sheet in a uniform layer by pressing together.

Bake for 15 to 18 minutes, until everything is lightly browned especially around the edges.

Cool completely before separating into pieces.
